Shrimp Scampi - HCC Take Home Basket $30

Ingredients:
Spaghetti Pasta
Salt
Chili Flake
2 Roma Tomatoes
2 2oz container Scampi Butter
10 EA 13/15 Jumbo Black Tiger Shrimp
3 Garlic Cloves
Parmesan
Club Cracker
Instructions:
For this dish you will need two sauté pans and a sauce pot for cooking pasta.
First get the pasta water started.
You will need about 3 Quarts of water and 3 Tablespoons of salt
Thinly slice garlic and dice tomatoes while the water comes to a boil.
Place the shrimp in a cold sauté pan with the tails pointing to the center. (The shrimp should
be one layer across the bottom of the pan)
Place 2oz scampi butter in the pan with the shrimp and season with salt and pepper.
Put the pan on a medium to low setting and cook the shrimp SLOWLY
Cook the pasta until it is cooked but still has bite. SAVE 1 CUP OF PASTA WATER!!!!
In separate pan over a medium heat melt the scampi butter and add garlic, tomato, and chili
flake to taste.
Allow garlic to caramelize, then add the pasta to the pan and toss to combine
Add pasta water if needed
Plate the pasta while hot and add shrimp with the finishing scampi butter over top
Finish with parmesan and cracker
